Maido is voted number 7 of the top 50 best restaurants in the world. They have an amazing veggie a la carte menu, with 11 courses. All 11 courses were very different, creative and delicious. The menu tends to change seasonally, but below is the 11 courses I had.
Veggie Experience
Course 1: Snacks
Rice cracker, avocado and ponzu.
Chirashi: Shari, Kiuri, baby corn and fukujinzuke.

Course 2: Vegetarian Ceviche
Zarandaja cream, tomato, baby corn, cucumber, mushrooms, radish and veggies leche de tigre.

Course 3: Tofu Capchi
Tofu, huacatay, rococo, potatoes and sweet tomatoes.

Course 4: Gyoza
Stuffed with vegetables.

Course 5: Udon
Tsuyu, negi, nori and tenkasu.

Course 6: Sandwich
Zarandaja burger, creole sauce, lettuce and tomato.

Course 7: Mushroom Kamameshi
Mushrooms, loche, chicha de jora and cilantro sprouts.

Course 8: Rococo relleno
Stuffed with mushroom stew and potato cheese foam.

Course 9: Loche
Panela ice cream, loche textures, corn and huacatay.
